Laurie Lay – Owner/ Chef

Laurie Lay is an owner and chef of Sprout, a localvore restaurant in the Fan District of Richmond VA. After owning and operating a small deli for several years, Laurie decided to follow her passion for local cuisine. She and her husband Jamie opened Sprout in May of 2010. Sprout features a menu of over 90% ingredients based on seasonality and availability from local independent Virginia Farms.

Laurie earned her master’s degree in psychology, and worked for a few years in both the academic and mental health fields, but felt that her interests pulled her to small business ownership. She loves the art and craft of cooking and upon opening Sprout she has been able to hone her skills in creating menus that express the quality of her ingredients. Much of her inspiration stems from travels in the South of France as well as Northern California, where she worked on organic farms and experienced the values of eating fresh local food. Laurie’s passions for food go beyond just the quality and taste and extend in to the social and economic welfare of working within a sustainable food system. Sprout is a hub and outlet for her creative and socially conscious efforts. With the help of her husband, and their friend and business partner Adam Bell, Laurie is giving Virginia a taste of its own medicine.
